Miranda's Miranda Fest: Star Trek Mirandas
I've found three Miranda references in Star Trek - a character named
Miranda Jones in the third season, the Miranda class of vessel, and
Miranda Vigo in last season of Next Generation.
Miranda Jones
Miranda Jones is a character from Star Trek episode "Is There
No Truth in Beauty" (Episode #62, 1968, Third Season).
Miranda is blind, and wears a dress with sensors on it so that she can
"see". She is a psychologist, and has been chosen to attempt the first
telepathic link with a Medusan, Ambadassador Kollos.

She is played by Diana Muldaur, who you may also know as
Dr. Pulaski in Star Trek: Next Generation (2nd season), or Shayes on LA Law.

Miranda Class
The Miranda-class starships were introduced in the late 2270s and
were in use for over 100 years. To put that into perspective,
Kirk was born in 2233, commanded the Enterprise from 2264-9,
was promoted to Admiral in 2269, and died (well, turned into an energy signature) in 2293; Picard
was born in 2305, and was chosen to command the Enterprise in 2363.
One famous Miranda vessel is the Reliant,
which played a key role in the detonation of the Genesis Device
(Star Trek II - The Wrath of Khan).

Stephen Pugh trace the history of the Miranda Class and its sub-classes
of starships, with some good illustrations. Apparently at one point
there was actually a U.S.S. Miranda. Steve also has a list
of all the Miranda
Class vessels of any sub-class, including Surya, Coventry, Soyuz,
Avenger, Daran, Knox, Endurance, Cyane and Kresta.

Miranda Vigo
Apparently Captain Picard had a romantic involvement with Miranda Vigo
while on shore leave to Earth in 2364. Her son Jason later had his
DNA resequenced by Bok to appear to be Picard's son - you can read
a little more about it in the Biography of Jean-Luc Picard.

this page is a spoiler for the plot of the episode (which means
that it has lots of details about the whole affair, if you're interested).
Apparently the best line from the episode is when Picard, finally
starting to bond with Jason, tells him "one thing's clear...you'll never look at your hairline again in the same way."
